Sono in campagna e l’orto quest’anno è stato particolarmente generoso, ecco una bella melanzana.
Di solito le faccio grigliate o alla parmigiana o una bella caponata, ma mi sono venute in mente le crocchette che facevo a Loretta quando era piccola e non amava molto le verdure, cosa non si fa per ingannare i bimbi!
La ricetta l’ho presa dal “Nuovissimo Cucchiaio d’Argento” del 1972 di mia mamma, di cui vi riporto testualmente le istruzioni.
8 melanzane /basilico /prezzemolo (che non avevo cosi ho sostituito con salvia) / 2 cucchiai di formaggio grattugiato/ farina (io usato quella di grano saraceno gluten free) / olio per friggere/sale /pepe (per 6 persone)
Sbucciate le melanzane, tagliatele grossi pezzi, scottatele in acqua salata a bollore, per una decina di minuti o poco più (devono rimanere belle morbide). Sgocciolatele e asciugatele in un canovaccio.
Tritate la polpa di melanzane con un o’ di prezzemolo e di basilico ( salvia :-)); aggiungete le uova sbattute, il formaggio grattugiato; regolate sale e pepe.
Se il composto fosse troppo molle, mettere un po’ di pane grattugiato (o farina di mais se le volete gluten free).
Preparate delle crocchettine piuttosto piccole, passatele nella farina, friggetele in olio bollente. Lasciate cuocere qualche minuto e dorare; sgocciolatele su carta assorbente; salatele solo all’ultimo momento, perché riescano asciutte e croccanti.
Come piatto principale ho preparato un’insalata di stokke, pomodorini dell’orto, capperi… facile, veloce e saporita!
Ca va sans dire…. il tutto accompagnato da un buon bicchiere di chardonnay!
