Ci sono anni che sono più attiva altri meno, l’anno scorso ero decisamente più attiva in cucina e cosi per Natale ho fatto un sacco di cosine, da un maglione per figlia, borsa di cuoio sempre per la nana, poi ho fatto tante piccole delizie da offrire agli amici, mi sono cimentata nel pandolce alla genovese, i biscotti “zimsterle” senza glutine allo zenzero e cannella, liquore a caffè e allo zenzero…..
Qui vi parlo dei miei cioccolatini, certo io ho un alleato in cucina, il mio abbattitore, che in pochi minuti mi raffredda il cioccolato, mantenendolo bello lucido.
Il segreto dei cioccolatini sta tutto come sempre nella qualità della cioccolata ma soprattutto nel passaggio di temperaggio.
Ho fatto vari corsi di cucina per imparare a farlo, e di fatto ci sono molti trucchi per farlo a livello casalingo, ma quello che mi è piaciuto di più è quello di scaldare tre/quarti del cioccolato al microonde e poi temperarlo con il rimanente cioccolato freddo.
una volta eseguita questa operazione si possono fare i cioccolatini.
Io li hofatti al sale, con il peperoncino, con granella di pistacchio, con un chicco di caffè e infine con una nocciola.
Ma ripeto il mio segreto è l’abbattitore, infatti una volta messo il cioccolato nella formina con ‘ingrediente che più ci piace, io li metto nell’abbattitore e dopo 20 minuti ho i cioccolatini pronti.
Visto che ho fatto dei corsi, per rispetto a chi vive di questi corsi, non mi va di svelare i segreti di tutti passaggi, ma se sei interessati scrivimi e te l racconterò volentieri….
